Weekly Weigh In: Part Two



I am back and way better than before.  I mean, I am only down .4 since the last weigh in, but again, I will take it.  This past week I took some huge steps.  First, I bought a Fitbit.  So I am now tracking my steps.  It really does make you aware of how much – or how little – you walk.  That said, my goal is to get to 10,000 steps a day. I have not met that goal consistently yet but I am trying.  Another huge win for me: I went to the gym 3 times last week.  Back to Couch to 5K.  Oh yes, did I mention I forced Nicole to sign up for another 5K for the end of July?* For me, it’s a goal that I have to meet.  So I think that has contributed to my refound friendship (cough) with the gym and my new relationship with the Fitbit.  I also managed to walk over 13,000 steps on one of the days I did not go to the gym.  Yet, another win.


Unfortunately, Cinco de Mayo set me back this week.  Yes, both Monday an Seis de Mayo (or Recovery Tuesday).  But, today I feel better, and again am refocused.


This week’s recipe is from Gina’s Skinny Recipes (Skinnytaste) again.  I made this Eggplant Panini last weekend and it was delicious.  I left off the pesto but did use a fair share of olive oil to crisp everything up.  I served it with baked fries (not the best but certainly not the worst).
