Eggplant Meatballs and Zucchini Noodles

I can’t believe we’re already at Day 15 of the 30 Days of Food Challenge. I have to say, I’ve enjoyed this and plan to keep it going—especially since I’m on this Six Week Diet/Workout Plan (if you’re following along, you can find Week 2 here). I’m enjoying weekly grocery trips where I’m buying fresh, whole foods. I’m also enjoying finding healthy recipes that feel a little indulgent. Today’s recipe is one of those. I followed the Skinnytaste recipe, which was adapted from Mark Bittman’s VB6 Cookbook, to the letter and the results were awesome. Ash loved it, though he wanted to add some chicken.
