Life Lately (#30DaysofFood)

As you know, I took the weekend off from the blog. As a result, there was a gap in the 30 Days of Food challenge. Does that mean I lose my own challenge? Oh well. I'm going to keep cooking anyway. Since there was no food (or anything) featured  on the site this weekend, I thought I'd do a Life Lately post featuring vacation food. Here's a bit of what we ate over the weekend. Warning, there isn't much that's healthy about the pictured options, but OH! Was it delicious.* It also couldn't have had better timing since today kicks off 6 weeks of clean eating and kicked up exercise. I'm doing another intense push to get past my latest plateau.

Today's meal plan is:

Breakfast: Fruit and Greens Smoothie (frozen peaches, 1/2 banana, 2 strawberries, 1 cup almond milk, 1 handful spinach, 1 tablespoon chia seeds, 1/2 teaspoon maca root powder)

Lunch: Mesculun salad with sliced roasted beets, chickpeas, hard-boiled egg whites, cherry tomatoes, and roasted red peppers. Dressed with chilled avocado dressing** (avocado, light mayo, lime juice, salt, cayenne pepper and water)

Dinner: Quinoa Burrito Bowl (recipe will be in a 30 Days of Food post this week)

**This salad dressing isn't exactly "clean" because of the chemicals in the light mayo.
